Pumpkin Fruit Cake

A delicious cake from Vanessa Cherry

Pumpkin Fruit Cake

INGREDIENTS

1 packet mixed fruit

1 cup sugar

1 cup margarine

1 cup cold, cooked, mashed pumpkin

2 cups S/R flour

2 eggs

vanilla to flavour

1 packet glace cherries





METHOD

Cream margarine and sugar, add eggs and vanilla, then the mixed fruit and pumpkin, add the flour last. Bake in a moderate oven.

Vanessa added a note – cooked for 45 minutes, then covered with foil and cooked

for another 15 minutes at 180 degrees c.

The recipe is taken from an old cookbook produced by Largs Public School.

Established in 1848.


This cake was a hit at the recent HOGS field day at Four Acre Farm, Marshdale.
